First, peel the Korean melon thoroughly. Cut it in half lengthwise and use a spoon to scoop out and discard the seeds from the center. Then, slice the melon into bite-sized pieces, about 1cm thick. Wash the chives and cut them into 5cm lengths.

In a large bowl, place the sliced Korean melon. Add 2 tablespoons of gochugaru (Korean chili flakes). Since the melon has a smooth surface after peeling, adding the chili flakes first helps them adhere better.

Gently mix the melon and chili flakes until evenly coated. Let it sit for a few minutes. The melon will release its natural juices, creating a moist coating that helps the flavors meld beautifully. Be careful not to mash the melon while mixing.
