  • 3 cucumbers
  • 2 beets
  • 2 bay leaves

Pickling Brine

  • 100ml sugar (approx. 1/2 cup)
  • 200ml vinegar (approx. 1 cup)
  • 400ml water (approx. 2 cups)
  • 1 Tbsp salt

Cooking Instructions

In a saucepan, combine the sugar, vinegar, water, bay leaves, and salt. Stir until the sugar is dissolved. Bring the mixture to a boil and let it simmer for about 1 minute. Then, turn off the heat. The bay leaves will infuse the brine with a wonderful aroma, enhancing the pickle’s flavor.

Wash the cucumbers thoroughly and pat them dry. Slice them into about 0.5cm thick pieces, either diagonally or into rounds. Wash the beets, peel them, and then slice them to a similar size or shape as the cucumbers. Be careful, as beet juice can stain clothing.

Pack the sliced cucumbers and beets snugly into a sterilized jar or airtight container. Pour the hot pickling brine over the vegetables, ensuring they are fully submerged. Seal the container and refrigerate for at least one day to allow the flavors to meld. The pickles will become even more delicious after 2-3 days of chilling.
