This pickled radish salad is a delightful side dish that’s perfect for when you’re not feeling very hungry. While delicious with basic seasonings, adding crisp onion and fragrant chili peppers makes it even more refreshing and invigorating. It’s a simple recipe that works wonderfully as a side for rice or as an ingredient in bibimbap!
Main Ingredients- Pickled radish (danmuji) 1 plate (approx. 200g)
- Onion 1/5 (small size)
- Green chili pepper 1
Cooking Instructions
Step 1
First, prepare the vegetables. Cut the green chili pepper in half, remove the seeds, and julienne it to match the length of the pickled radish. Julienne the onion as well. Julienne the pickled radish into bite-sized pieces.
Step 2
In a bowl, combine the julienned pickled radish, onion, and green chili pepper. Add 1 Tbsp of sesame oil and 1 Tbsp of oligosaccharide.
Step 3
Add 1 Tbsp of gochugaru. If your pickled radish is bland, season it with the optional ingredients: 0.5 tsp of salt, 1 tsp of sugar, and 1 tsp of vinegar. If the pickled radish is already quite sour, it’s best to omit the vinegar.
Step 4
Add the chopped green onion and toasted sesame seeds. Gently mix everything together with your hands until well combined. Be careful not to mash the ingredients; a gentle toss is key.
Step 5
The finished pickled radish salad gets a refreshing crunch from the crisp onion and a zesty, invigorating flavor from the green chili pepper.
