Crisp and Refreshing Radish Salad (Mu Saengchae)

Create this flavorful and zesty radish salad at home with ease. It’s a perfect side dish that complements any main course wonderfully.
Main Ingredients
- 280g radish (about 1/3 of a medium radish)
- A small amount of green onion (about 5cm in length)
Seasoning
- A pinch of coarse salt (or sea salt)
- 2 Tbsp vinegar (adjust to taste)
- 1/2 Tbsp sugar (adjust to taste)
- 1 Tbsp toasted sesame seeds

Cooking Instructions
Step 1
Wash the radish thoroughly, peel it, and then slice it into very thin matchsticks, about 0.2cm thick. Place the julienned radish directly into a large bowl. Slicing thinly will make the radish crisper and allow it to absorb the seasoning better.
Step 2
Wash the green onion and thinly slice it, including both the white and green parts. Thinly sliced green onions will mix well with the seasoning and add a pleasant texture.
Step 3
Add the seasoning ingredients to the julienned radish in the bowl. First, add a pinch of coarse salt to help draw out moisture from the radish and season it. Then, add 2 tablespoons of vinegar and 1/2 tablespoon of sugar. You can adjust the amount of sourness and sweetness to your personal preference for an even tastier result.
Step 4
Gently mix the seasoning ingredients, radish, and green onion with your hands until evenly combined. Be careful not to mix too vigorously, as this can make the radish mushy. Taste the salad and add more salt if it’s too bland, or a little more sugar if it’s not sweet enough. Finally, sprinkle generously with toasted sesame seeds for a nutty flavor to complete your delicious Mu Saengchae.
