  • 1 Red Chili Pepper

Seasoning Ingredients

  • 1 Tbsp Minced Scallion
  • 1 Tbsp Minced Garlic
  • 1.5 Tbsp Salt (adjust to taste)
  • A dash of Sesame Oil
  • A sprinkle of Toasted Sesame Seeds

First, gently rub the root ends of the bean sprouts under running water to clean them thoroughly. Rinse them well to ensure no dirt or debris remains. Finely slice the red chili pepper after removing the seeds. This will add a beautiful color to the dish.

In a pot, bring about 1/2 cup of water to a boil with 1/2 tablespoon of salt. Once the water is vigorously boiling, add the cleaned bean sprouts. Cover the pot and let them cook for exactly 1 minute. Immediately after, turn off the heat, drain the bean sprouts, and rinse them under cold water to cool them down. This technique is key to maintaining their crisp texture.

Transfer the blanched, crisp bean sprouts and the sliced red chili pepper into a large mixing bowl. Add the minced scallion (1 Tbsp), minced garlic (1 Tbsp), the remaining salt (1 Tbsp, making a total of 1.5 Tbsp), a dash of sesame oil, and a sprinkle of toasted sesame seeds for nutty flavor. Gently toss everything together with your hands, being careful not to mash the bean sprouts. Mix just enough until all the ingredients are well combined and coated with the seasoning.
