  • 1.2kg Korean radish (peeled and cleaned)
  • 2 stalks green onion (white parts mostly, equivalent to 2 roots)

Seasoning Ingredients

  • 6 Tbsp red pepper flakes (gochugaru)
  • 3 Tbsp sugar
  • 5 Tbsp fish sauce (anchovy or sand lance)
  • 1 Tbsp salt
  • 3 Tbsp minced garlic

Cooking Instructions

First, peel the Korean radish and julienne it into thin, uniform strips. Using a mandoline slicer will help you achieve consistent thickness and shape. Avoid making the strips too thick for a better texture.

Wash the green onions and then slice them diagonally at about a 0.5cm thickness. Using the white parts of the green onions will add sweetness and aroma.

All seasoning ingredients were measured using a standard Korean rice spoon, commonly found in most homes. Accurate measurements are key to balancing the flavors.

In a large bowl, combine the julienned radish with all the prepared seasoning ingredients: red pepper flakes, sugar, fish sauce, minced garlic, and salt. You can adjust the amount of sugar and salt according to your personal preference. A touch of sweetness and saltiness will enhance the radish’s flavor.
