First, prepare the star of your scallion salad: the scallions. For about 3 servings, prepare approximately 200g. Using mostly the white and light green parts of the scallions will result in a crisper and tastier salad.

It’s important to julienne the scallions finely. Using a scallion slicer, easily found at stores like Daiso, is convenient for quickly and uniformly cutting the scallions. If you don’t have one, use a knife to slice them thinly.

Use the scallion slicer to julienne the scallions. Cutting them to a consistent thickness ensures even cooking and a pleasant texture. If they’re cut too thick, the dressing might not penetrate well.

The julienned scallions you have here weigh about 200g, which is a little over one large stalk. Feel free to adjust the amount to your preference. It’s good to prepare a generous amount based on the quantity of meat you’re serving.

Soaking the julienned scallions in water is recommended to reduce their pungent, sharp flavor. Soaking them in cold water for about 10 minutes will mellow the sharpness, making the salad much milder. Be careful not to soak them for too long, as this can diminish their crispness.
