  • 1/2 crisp apple
  • Pinch of salt (for seasoning adjustment)

Sweet and Spicy Dressing

  • 1 Tbsp gochugaru (Korean chili powder)
  • 1 Tbsp soy sauce
  • 1 Tbsp oligo syrup (or corn syrup)
  • 1 Tbsp vinegar
  • 0.5 Tbsp brown sugar
  • 2 Tbsp maesilcheong (plum extract)
  • 1 Tbsp mirin (rice wine)
  • 1 Tbsp sesame oil
  • Pinch of toasted sesame seeds

Cooking Instructions

First, prepare all the ingredients for your green onion salad. Using fresh green onions and a crisp apple will yield the best results.

Wash the green onions thoroughly. Cut them into approximately 3-4 cm lengths. For thicker stalks, make a lengthwise cut to halve them, and then remove the tough inner core. Finally, thinly julienne the green onions. This ensures the dressing coats evenly.

If julienning green onions seems tedious, you can easily and quickly achieve this using a green onion slicer tool available in stores.

Place the julienned green onions in a bowl of cold water for about 10 minutes. This soaking process mellows out their pungent spiciness while preserving their crisp texture.

After soaking, rinse the green onions briefly under cold water and then drain them thoroughly in a colander. Excess water can dilute the dressing.

In a small bowl, combine all the ‘Sweet and Spicy Dressing’ ingredients: gochugaru, soy sauce, oligo syrup, vinegar, brown sugar, maesilcheong, mirin, sesame oil, and sesame seeds. Whisk them together until well combined. Taste the dressing and adjust the seasoning with a pinch of salt if needed, according to your preference.

Wash the apple thoroughly, even with the skin on, using baking soda or vinegar. Remove the core and thinly julienne the apple, keeping the skin on for color and nutrients. The skin adds a lovely hue and extra health benefits.
