Today, we introduce a salad using ‘apple jujubes,’ a special fruit with a crisp apple texture and the deep sweetness of jujubes, boasting a sugar content of 22-35 Brix or higher. Rich in nutrients and even used in traditional medicine, jujubes are delicious eaten fresh. This salad, combining them with fresh vegetables, is a wonderful delicacy on its own. Salad Ingredients- 1 large leaf of cabbage
- 1/4 red onion
- 1/4 cucumber
- 2-3 apple jujubes
- A little carrot
- 2 pieces of imitation crab (kani)
- 1 hard-boiled egg
- Optional: favorite leafy greens (e.g., lettuce, romaine)
Cooking Instructions
Step 1
First, prepare the vegetables. Finely shred the cabbage and thinly slice the red onion. Cut the cucumber in half lengthwise, then slice it into half-moon shapes about 0.5cm thick. If you have a small flower-shaped cutter, use it to cut the carrot into decorative shapes, or simply julienne it. Feel free to add other favorite leafy greens like lettuce, romaine, or bell peppers if you have them.

The star of today’s salad, apple jujubes, should be washed thoroughly under running water. Remove the seeds and thinly slice them with the skin on. The crisp texture and sweetness of the apple jujubes will add a special touch to your salad.

Place the shredded cabbage, red onion, cucumber, and carrot in a bowl of cold water for about 10 minutes to enhance their crispness. Then, drain them completely in a colander. Thoroughly draining the ingredients is a crucial step for making a great salad! If the water isn’t properly removed, the dressing can become watery and dilute the flavors.

Cut the imitation crab sticks into triangular pieces. Slice the hard-boiled egg into rounds about 0.7-1cm thick after it has cooled completely. (Tip: Slicing a warm hard-boiled egg can cause it to crumble. For neat slices, ensure the egg is fully chilled before cutting.)

Now, let’s make the salad dressing. In a small bowl, combine 2 tablespoons of mayonnaise, 2 tablespoons of honey, and 1 tablespoon of whole grain mustard. Whisk until smooth. You can adjust the amount of whole grain mustard to your preference. The sweet and tangy dressing perfectly complements the salad.

Arrange the well-drained vegetables in the center of your serving plate, creating a nice mound. Place the sliced hard-boiled egg around the edges, standing them up for an appealing presentation.
