Crisp Apple and Pear Radish Kimchi (Kkakdugi)

I made some refreshing and sweet Kkakdugi using apples and pears, which are in season right now. Surprisingly, it doesn’t release much water and tastes incredibly delicious. Plus, it’s super easy to make!

Main Ingredients

  • 1 Apple
  • 1 Pear
  • 1 Bell Pepper (using various colors will make it more visually appealing)

Seasoning Ingredients

  • 1 Tbsp Minced Garlic
  • 1 Tbsp Gochugaru (Korean chili flakes, adjust to your preference)
  • 3 Tbsp Plum Extract (Maesilcheong, for sweetness and flavor)
  • 1 Tbsp Saeujeot (Salted fermented shrimp, use only the mashed solids)
  • 1 Tbsp Fish Sauce (Kkanari or anchovy fish sauce)
  • 1 Tbsp Sesame Seeds

Cooking Instructions

Step 1

First, prepare the fruits and vegetables for the Kkakdugi. Have ready 1 fresh apple, 1 pear, and 1 bell pepper for vibrant color.

Wash the pear thoroughly. Cut it into quarters, remove the hard core, and peel the skin. Then, dice it into approximately 2cm cubes, similar to Kkakdugi. Cutting them too small might make them mushy, so aim for a bite-sized piece.

Dice the apple into roughly 2cm cubes, similar in size to the pear. Remove the core and you can either peel the apple or leave the skin on, depending on your preference.

Remove the seeds from the bell pepper and dice it into approximately 2cm cubes, matching the size of the apple and pear. Using bell peppers of different colors like red and yellow will make your Kkakdugi look much more appetizing.

Add 1 Tbsp of gochugaru to the diced pear, apple, and bell pepper. Gently mix to ensure the chili flakes coat all the ingredients evenly.

Toss the ingredients coated with gochugaru and let them sit for about 5 minutes. This allows the color to beautifully infuse into the fruits and vegetables.

In a separate bowl, combine 1 Tbsp of minced garlic, 3 Tbsp of plum extract, 1 Tbsp of mashed salted fermented shrimp (solids only), 1 Tbsp of fish sauce, and 1 Tbsp of sesame seeds. Mix well to create a delicious seasoning sauce.

Pour the prepared seasoning sauce over the fruits and vegetables that have been colored with gochugaru.

Gently mix all the ingredients together, and your delicious Apple Pear Kkakdugi is ready! It’s tasty right away, but chilling it in the refrigerator will enhance its refreshing and crisp texture. You’ll be amazed at how it stays crisp for days without releasing much water!
