I’ve made a delicious seasoned vegetable dish by adding chewy enoki mushrooms and crisp, sweet carrots to fresh bean sprouts. It’s a fantastic side dish for rice and perfect when you don’t have much appetite!

  • 1 tablespoon toasted sesame seeds, for a delightful texture
  • 1 tablespoon chopped green onion, for freshness

First, gently rinse the fresh bean sprouts under cool running water a couple of times. This step helps remove any dirt or loose skins, ensuring a cleaner and more pleasant flavor for your namul.

Julienne the carrot as thinly as possible. Trim the root end of the enoki mushrooms and gently separate them with your hands. Bring a pot of water to a rolling boil. Blanch the enoki mushrooms, bean sprouts, and carrots briefly, about 15-30 seconds each. Be careful not to overcook them, as they will lose their crispness. Immediately rinse the blanched vegetables in cold water to stop the cooking process.

Drain the blanched vegetables thoroughly in a colander. Excess water can dilute the dressing and affect the taste, so gently press them to remove as much moisture as possible.
