First, to preserve the vibrant green color of the garlic scapes, we’ll blanch them in boiling water with 1 teaspoon of coarse salt. The salt not only keeps the color bright but also helps prevent the growth of any residual bacteria, keeping them fresh.

Wash the garlic scapes thoroughly under running water and cut them into bite-sized pieces, about 4-5 cm long. Once the salted water is at a rolling boil, add the prepared garlic scapes and blanch for just 1 minute. Be careful not to overcook, as they can become mushy! Immediately remove the blanched scapes and rinse them thoroughly under cold running water to stop the cooking process and cool them down. This step is key to achieving a crisp texture.
Step 4
In a bowl, combine all the seasoning ingredients: 1 tsp soy sauce, 2 tsp gochujang, 1 tsp gochugaru, 1/2 tsp sugar, and 1 tsp toasted sesame seeds. Mix well to create a delicious sauce.
