Crisp Green Beans, Garlic, and Potato Stir-Fry with Soy Glaze

How to Make a Delicious Green Bean, Garlic, and Potato Soy Glazed Stir-Fry

Crisp Green Beans, Garlic, and Potato Stir-Fry with Soy Glaze

I was inspired to make this dish after enjoying a delicious stir-fry where green beans were caramelized with soy sauce alongside meat. Using fresh, locally sourced green beans, they retain their crispness and natural sweetness even after stir-frying, making them incredibly tasty. I’ve also added a generous amount of garlic to enhance the aroma and for its health benefits, ensuring we stay vigorous and healthy! Since there was a potato rolling around, I decided to add it in for extra texture and flavor. The wonderful thing about this dish is how each ingredient respects the others, bringing out its unique personality while harmonizing beautifully in the soy glaze. The stir-fried garlic loses its pungent bite, becoming subtly sweet and flavorful, and packed with anticancer properties, making it a joy to eat heartily. The green beans offer a delightful crunch and a hint of sweetness with every bite, making you feel healthier with each mouthful. Potatoes, like a secret ingredient, are always welcome and loved in any dish; these stir-fried potatoes are savory and wonderfully tender. The fun comes from choosing among these three distinct vegetables! Enjoy this flavorful and healthy soy-glazed stir-fry that’s sure to become a favorite meal companion.

Ingredients

  • 7 fresh green beans
  • 40 cloves whole garlic (adjust to your preference)
  • 1 medium potato
  • 2 tablespoons cooking oil (or olive oil)
  • 2 tablespoons soy sauce (adjust to taste)
  • 1 tablespoon corn syrup (or other sweetener, adjust to taste)
  • A pinch of black pepper

Cooking Instructions

Step 1

First, thoroughly wash the green beans under running water. Then, soak them in a bowl of water with 2 tablespoons of vinegar for about 10 minutes. This step helps to sanitize the green beans, ensuring they are safe and clean to eat.

Step 1

Step 2

After soaking, drain the green beans and trim off the ends. Cut them in half crosswise into bite-sized pieces. Wash the whole garlic cloves and peel off the outer skin. Trim off the pointy root end of the garlic; this will make them softer when cooked.

Step 2

Step 3

Peel the potato and cut it into small, uniform cubes (about 1/2 inch). Rinse the cubed potatoes under cold running water to remove excess starch. This prevents them from sticking together and results in a better texture when stir-fried.

Step 3

Step 4

Heat 2 tablespoons of cooking oil in a frying pan over medium-high heat. Add the prepared whole garlic, green beans, and cubed potatoes to the pan. Stir-fry the ingredients, ensuring they are well combined.

Step 4

Step 5

Continue to stir-fry until the vegetables are cooked through. Fresh green beans might have a slight ‘beany’ smell initially, but as they cook, they’ll turn a vibrant green, the smell will dissipate, and their natural sweetness will emerge. Cook until the potatoes are tender and the green beans are still crisp. Cooking with the lid on over medium-high heat helps to cook the vegetables evenly.

Step 5

Step 6

Once the vegetables are nearly cooked, add 2 tablespoons of soy sauce and 1 tablespoon of corn syrup (or your preferred sweetener). Stir well to coat all the ingredients evenly with the glaze and continue to cook for another 1-2 minutes until the sauce thickens slightly. Finish with a pinch of black pepper for added aroma. Your delicious green bean, garlic, and potato soy-glazed stir-fry is now ready to serve!
