Cooking Instructions
Step 1
Prepare all your ingredients before you begin. Ensure the Napa cabbage leaves are ready to be used, and wash and chop all vegetables thoroughly.
Step 2
Trim the tough base of each Napa cabbage leaf. Carefully separate the leaves and wash them under running water. Place the washed leaves in a steamer basket over boiling water and steam for about 7 minutes until tender but still slightly crisp. Drain the steamed cabbage leaves and set aside.
Step 3
In a bowl, combine the ground beef with 1 Tbsp soy sauce, 1 Tbsp cooking wine, 1 Tbsp minced garlic, 1 Tbsp sugar, 1 Tbsp sesame oil, and a pinch of black pepper. Mix gently with your hands until all the seasonings are evenly distributed.
Step 4
Heat a pan over medium heat and add the marinated ground beef. Stir-fry until the beef is cooked through and any excess moisture has evaporated, ensuring it becomes slightly dry and crumbly. Remove the cooked beef from the pan and set it aside.
Step 5
Blanch the bean sprouts in boiling water for just 2 minutes to keep them crisp, then rinse under cold water and drain well. Cook the glass noodles according to package instructions, rinse under cold water, and drain. Mash the tofu using the back of a knife and press out as much water as possible. Finely chop the green onion.
Step 6
To the drained glass noodles, add 1/2 Tbsp soy sauce, 2 pinches of salt, 1/2 Tbsp sesame oil, and a pinch of black pepper. Toss gently to season the noodles evenly.
Step 7
In a large bowl, combine the seasoned glass noodles, cooked ground beef, blanched bean sprouts, mashed tofu, chopped green onion, and chopped chives. Add 1 Tbsp soy sauce, 1/2 tsp salt, and a pinch of black pepper. Sprinkle in 2 Tbsp perilla powder and 1 Tbsp minced garlic. Mix everything together gently with your hands until well combined.
Step 8
Finally, drizzle in 1 Tbsp sesame oil and mix once more to complete the delicious filling. Now it’s time to wrap this filling using the steamed Napa cabbage leaves.
Step 9
Lay a steamed Napa cabbage leaf flat. Place a portion of the prepared filling in the center of the leaf. Fold the sides of the leaf inwards and then roll it up tightly to form a neat wrap, similar to a dumpling.
Step 10
Prepare an egg wash by cracking an egg into a small bowl and whisking it until smooth. Dip each prepared wrap into the egg wash, ensuring it’s fully coated.
Step 11
Heat a non-stick pan over medium-low heat and add a little cooking oil. Carefully place the egg-washed wraps in the pan. Gently roll them around to ensure all sides are lightly browned and golden. Since the filling is already cooked, you just need to crisp up the exterior.
Step 12
Arrange the nicely browned Napa cabbage and tofu wraps on a serving plate. To enhance the flavor, prepare a dipping sauce. You can finely chop pickled chili peppers and mix them with soy sauce, a little sugar, and sesame oil for a flavorful condiment. If pickled chili peppers are unavailable, a simple soy sauce-vinegar dip (soy sauce, vinegar, sugar) will also be delicious.
