Salad Ingredients- 1 bowl fresh salad greens
- 1/4 crisp apple
- 1/3 kohlrabi, crisp and slightly sweet
Savory Soy Dressing- 2 Tbsp soy sauce
- 1 Tbsp olive oil
- 1/2 tsp mustard (e.g., Dijon or yellow)
- 1/2 tsp mustard seeds
- 1 tsp dried basil
- 1/2 tsp honey (or 1/2 tsp sugar)
- 1/2 tsp toasted sesame seeds
- Juice of 1 lemon (or 1 Tbsp vinegar)
- 2 Tbsp soy sauce
- 1 Tbsp olive oil
- 1/2 tsp mustard (e.g., Dijon or yellow)
- 1/2 tsp mustard seeds
- 1 tsp dried basil
- 1/2 tsp honey (or 1/2 tsp sugar)
- 1/2 tsp toasted sesame seeds
- Juice of 1 lemon (or 1 Tbsp vinegar)
Cooking Instructions

First, wash your salad greens thoroughly and gently pat them dry. You can use a salad spinner or kitchen towels. Removing excess water is key to preventing the dressing from becoming diluted and ensuring the natural flavors shine through.

While we prepare the other ingredients, let’s get started on the special soy dressing that will make this kohlrabi salad truly shine.

Place the washed salad greens in a bowl of fresh water. This ensures any remaining dirt or impurities are washed away and also helps to rehydrate any slightly wilted greens, making them extra crisp.

In a small mixing bowl, add the foundation of our dressing: 2 tablespoons of soy sauce.

Next, pour in 1 tablespoon of fragrant olive oil. Olive oil will mellow the flavors and add a lovely richness to the dressing.
