Main Ingredients- 1 bag of soybean sprouts (standard grocery store size)

- 1/4 carrot
- 1/4 cucumber
- 1/4 bell pepper (using various colors adds visual appeal)
- 2 sticks of imitation crab meat (kani)
Mustard Dressing- 1 Tbsp prepared mustard (like Japanese karashi)
- 2 Tbsp vinegar
- 1/2 Tbsp soy sauce
- 1 Tbsp oligosaccharide (or honey/sugar)
- A pinch of sesame seeds
- 1 Tbsp prepared mustard (like Japanese karashi)
- 2 Tbsp vinegar
- 1/2 Tbsp soy sauce
- 1 Tbsp oligosaccharide (or honey/sugar)
- A pinch of sesame seeds
Cooking Instructions
Step 1
First, rinse the soybean sprouts thoroughly. Bring a pot of water to a boil. Once boiling, add the rinsed soybean sprouts. To keep them crisp, stir them gently about 10 times and cook for no more than 1 minute. Be careful not to overcook, as they can become mushy. After boiling, rinse the sprouts under cold water and drain them completely.

Step 2
Now, let’s prepare the vegetables to mix in. Thinly slice the onion. Peel the carrot and cucumber using a peeler and then julienne them, or simply slice them thinly. Seed the bell pepper and julienne it. Tear the imitation crab meat into small pieces or slice it thinly. Try to cut all the vegetables into similar lengths for a visually appealing dish.

Step 3
Place the drained soybean sprouts into a large mixing bowl. Rinsing them under cold water after boiling is important to remove any lingering ‘beany’ smell.

Step 4
Add all the prepared vegetables – onion, carrot, cucumber, bell pepper, and imitation crab meat – to the bowl with the soybean sprouts. The fresh vegetables will add a wonderful texture and flavor.

Step 5
It’s time to make the delicious mustard dressing. In a small bowl, combine 1 Tbsp prepared mustard, 2 Tbsp vinegar, 1 Tbsp oligosaccharide, and 1/2 Tbsp soy sauce. Mix well. You can adjust the amount of mustard according to your preference. The ratio of mustard to vinegar is key, so start with the recommended amounts and taste, adjusting as needed to suit your palate.

Step 6
Pour the prepared mustard dressing over the soybean sprouts and vegetables in the bowl. Gently toss everything together with your hands until well combined. Be careful not to mash the sprouts; mix them gently.

Step 7
Finally, sprinkle some sesame seeds on top to complete your crisp, tangy, and slightly sweet soybean sprout salad! It’s delicious served immediately, or you can chill it in the refrigerator for a more refreshing taste. It’s also great served over rice as a quick meal or as a side salad.
