Cooking Instructions
Step 1
First, prepare your fresh Korean melons. Using firm melons with fewer seeds, often referred to as ‘frog melons,’ will result in a crispier and tastier kkakdugi. Wash the melons thoroughly and cut them in half.

Using a spoon, carefully scoop out and discard the seeds from the halved melons. It’s important to remove as much of the seeds as possible to prevent the kkakdugi from becoming mushy.

Peel the melons thinly with a peeler, then cut them into bite-sized cubes, about 1.5 to 2 cm in size. Cutting them too small might cause them to break apart during mixing.

In a mixing bowl, combine the cubed melon with all the prepared seasoning ingredients: minced garlic, gochugaru, salt, and maesil extract. Ensure all seasonings are added evenly.
