  • 1 Tbsp Toasted Sesame Seeds

  • 1/2 Tbsp Minced Garlic
  • 1.5 Tbsp Gochugaru (Korean chili flakes – adjust to your spice preference)
  • 2/3 Tbsp Salt (adjust to taste)
  • 1 Tbsp Maesil Extract (Plum Extract for sweetness and umami)

First, prepare your fresh Korean melons. Using firm melons with fewer seeds, often referred to as ‘frog melons,’ will result in a crispier and tastier kkakdugi. Wash the melons thoroughly and cut them in half.
