While carrots are available year-round, winter carrots are exceptionally sweet and flavorful. This recipe shows you how to create a light and satisfying salad meal using these seasonal gems. It’s a simple yet delicious way to enjoy the best of winter produce.
Salad Ingredients- 100g Mixed greens (use a variety of your favorite leafy greens)
- 150g Carrots (choose sweet, fresh winter carrots)
- 2 Walnuts (for a delightful nutty crunch)
- 20g Apple (adds a crisp texture and refreshing touch)
- 20g Shredded cheese (cheddar or mozzarella recommended, adjust to your preference)
Dressing Ingredients- 1 Tbsp Salt (for salting the carrots)
- 1 tsp Stevia (or sugar/honey to taste)
- 2 Tbsp Olive oil (extra virgin recommended)
- 2 Tbsp Lemon juice (freshly squeezed is best)
- 1.5 Tbsp Whole grain mustard (for a pleasant texture and tang)
- 1 Tbsp Salt (for salting the carrots)
- 1 tsp Stevia (or sugar/honey to taste)
- 2 Tbsp Olive oil (extra virgin recommended)
- 2 Tbsp Lemon juice (freshly squeezed is best)
- 1.5 Tbsp Whole grain mustard (for a pleasant texture and tang)
Cooking Instructions
Step 1
First, thoroughly wash and peel the carrots. Then, using a julienne peeler or a knife, cut them into thin, fine shreds. Place the shredded carrots in a bowl and sprinkle with 1 tablespoon of salt. Gently toss and let them sit for about 10-15 minutes to salt and draw out moisture, which helps maintain their crispness.
Step 2
Wash the mixed greens under cold running water until clean. After washing, drain them well in a colander. It’s important to remove excess water, as it can make the salad taste diluted.
Step 3
In a small bowl, combine the dressing ingredients: 2 tablespoons of olive oil, 2 tablespoons of lemon juice, 1 teaspoon of stevia, and 1.5 tablespoons of whole grain mustard. Whisk everything together until well combined to create a delicious dressing. Ensure all ingredients are thoroughly blended.
Step 4
After about 15 minutes, when the carrots have released their water, squeeze out as much excess moisture as possible with your hands. Add about half of the prepared dressing to the drained carrots and toss to coat evenly, creating the carrot ‘rapée’. Ensure the dressing is well incorporated.

Wash the apple thoroughly and thinly slice it, keeping the skin on. Remove the core and seeds, then slice into bite-sized pieces. Leaving the skin on adds nutrients and a nice visual appeal.
