Main Ingredients- Cabbage, 200g
- Canned Corn, 100g
- Carrot, 1/4 medium
- Imitation Crab Meat, 3 sticks
Vegetable Brine- Sugar, 0.5 Tbsp
- Salt, 0.5 Tbsp
- Vinegar, 1 Tbsp
Dressing- Sugar, 1 Tbsp
- Mayonnaise, 3 Tbsp
- Honey Mustard, 1 Tbsp
- Black Pepper, a pinch (to taste)
- Sugar, 0.5 Tbsp
- Salt, 0.5 Tbsp
- Vinegar, 1 Tbsp
Dressing- Sugar, 1 Tbsp
- Mayonnaise, 3 Tbsp
- Honey Mustard, 1 Tbsp
- Black Pepper, a pinch (to taste)
Cooking Instructions
Step 1
Finely shred the cabbage. Soak the shredded cabbage in water with 1 Tbsp of vinegar for about 5 minutes, then rinse thoroughly under cold running water. This step helps to enhance the cabbage’s crispiness. Drain the cabbage completely in a colander.
Step 2
Julienne the carrot into thin strips, similar in thickness to the shredded cabbage. If using a mandoline, you can easily achieve uniform strips.
Step 3
Gently shred the imitation crab meat into bite-sized pieces. Avoid chopping it too finely; shredding it along the grain will give a more pleasant texture.

Drain the canned corn well. Excess water can make the coleslaw watery, so ensure it’s thoroughly drained.

In a large bowl, combine the drained shredded cabbage, julienned carrots, and drained corn.

To help draw out moisture from the vegetables and add a preliminary seasoning, add the ingredients for the vegetable brine: 0.5 Tbsp sugar and 0.5 Tbsp salt.

Add 1 Tbsp of vinegar and gently toss everything together to combine. Let the mixture sit for 15 to 20 minutes. This resting period allows the vegetables to soften slightly and absorb the flavors.

After resting, gently squeeze out any excess liquid from the vegetables with your hands. This prevents the coleslaw from becoming soggy. Return the squeezed vegetables to the bowl and add the shredded imitation crab meat, mixing them together.

Now, let’s prepare the dressing that brings the coleslaw to life. In a separate small bowl, combine 3 Tbsp of mayonnaise and 1 Tbsp of sugar.

Add 1 Tbsp of honey mustard for a touch of sweetness and tang, and a pinch of freshly ground black pepper. Adjust the pepper to your liking.
