Ingredients

  • 1 Lotus root (medium-sized)
  • 1 tsp Salt
  • 2 Tbsp Olive oil

Cooking Instructions

Step 1

First, thoroughly peel the lotus root and wash it carefully under running water. Using a mandoline slicer or a grater, slice the lotus root as thinly as possible. The thinner the slices, the crispier your chips will be. Soak the sliced lotus root in cold water for about 5 minutes to remove excess starch, which will result in a cleaner flavor. Pat the slices completely dry with paper towels.

In a bowl, combine the dried lotus root slices with 1 teaspoon of salt and 2 tablespoons of olive oil. Gently toss and massage the ingredients together until the lotus root is evenly coated. This step seasons the lotus root and the olive oil helps create a crispy texture during cooking.

Arrange the seasoned lotus root slices in a single layer in the air fryer basket, ensuring they don’t overlap. Preheat your air fryer to 160°C (320°F) and cook for 5-7 minutes. Once the edges begin to turn lightly golden, carefully remove the basket and flip the lotus root chips over. Return the basket to the air fryer and cook for another 5-7 minutes at the same temperature. This ensures both sides are evenly crisped to perfection. Keep an eye on them to prevent burning!
