  • 3 slices sandwich ham
  • 1 medium onion
  • 2 Tbsp potato starch
  • 1 cup shredded mozzarella cheese
  • 1 Tbsp grated Parmesan cheese
  • 2 Tbsp cooking oil
  • Pinch of dried parsley (optional)

  • 0.5 Tbsp cooking oil (for brushing parchment paper)

Cooking Instructions

Step 1

First, wash the potatoes and peel them. Then, cut them into very thin matchsticks. The thinner you slice them, the crispier your pancake will be after cooking. Using a mandoline slicer makes it easy to achieve uniform thinness.

Step 2

Thinly slice the onion similarly to the potatoes. Cut the sandwich ham into slightly thicker pieces than the potatoes or onion. If they are too thin, they might burn quickly during cooking.

Step 3

Place the sliced potatoes in a bowl of cold water and rinse them 2-3 times to remove excess starch. Continue rinsing until the water runs clear. This step helps prevent the pancake from becoming gummy and ensures a cleaner taste.

Step 4

Drain the rinsed potatoes in a colander. Then, use paper towels to pat them dry thoroughly, removing as much moisture as possible. Excess water will prevent the pancake from crisping up, so thorough drying is key.

In a mixing bowl, combine the dried potato matchsticks, sliced onion, and chopped ham.

Add 2 tablespoons of potato starch and 1 tablespoon of grated Parmesan cheese to the bowl. The Parmesan cheese adds a wonderful depth of flavor to the potato pancake.

Pour in 2 tablespoons of cooking oil and gently mix everything together with chopsticks. Toss the ingredients lightly rather than vigorously kneading to maintain the potato’s texture. Overmixing can make the potatoes mushy.
