Crispy Air Fryer Walnut Pie

I had a bag of walnuts at home that were just sitting in the cupboard! So, I decided to use them up by making my favorite walnut pie. I’m not a fan of thick pie crusts; I even prefer the Portuguese style of egg tarts! Making crispy, flaky pastry crust at home can be quite inconvenient in a small kitchen, so I opted for a convenient store-bought option!
Ingredients (Makes 12 servings)- 200g Walnuts
- 56g Butter
- 2 Eggs
- 170g Brown Sugar
- 45g Oligosaccharide (or Corn Syrup)
- 7g Cinnamon Powder
- 12 Pre-made Tart Shells (or Pie Crusts)
Cooking Instructions
Step 1
First, gather and measure all the ingredients needed for the walnut pie. Using pre-made tart shells will save you the hassle of making pastry and allow you to complete the pie much more easily.
Step 2
Lightly crack the walnuts with a knife into bite-sized pieces. Avoid breaking them down too finely, as this will give you a satisfying crunch in every bite.
Step 3
In a pot, bring plenty of water to a boil. Once boiling, add the cracked walnuts and simmer for about 3 minutes. This step helps to remove any bitterness from the walnuts and enhances their nutty flavor.
Step 4
Drain the boiled walnuts thoroughly and pat them dry. Then, transfer them to a dry skillet and toast over medium-low heat. Stir constantly as you toast to evaporate any remaining moisture, which will make the walnuts even crispier and more flavorful.
Step 5
In a small bowl, place the 56g of butter and melt it gently using a double boiler (by placing the bowl over a pot of simmering water). In a separate bowl, crack and lightly beat the 2 eggs.
Step 6
To the melted butter, add the 170g of brown sugar, 7g of cinnamon powder, and 45g of oligosaccharide. Stir to combine. Once the sugar starts to dissolve and you notice a slight grittiness, gradually pour in the beaten eggs while stirring gently to create the filling. Be careful not to overmix.
Step 7
Add the toasted walnuts to the prepared filling and mix well. Now, carefully spoon the walnut filling into each of the pre-made tart shells or pie crusts. Be sure not to overfill, as the filling might spill out during baking.
Step 8
Before baking, preheat your air fryer to 180℃ (350℉) for about 3 minutes. Preheating helps ensure the pies cook evenly and achieve a perfect crispness.
Step 9
Carefully place the filled tart shells into the preheated air fryer. Bake at 150℃ (300℉) for approximately 15 minutes. Keep an eye on them during baking to prevent burning, and remove them once they are golden brown and cooked through. The baking time may vary slightly depending on your air fryer model.
Step 10
Your delicious air fryer walnut pies are ready! They are wonderful served warm, but also delightfully crunchy when cooled. Enjoy them with a cup of coffee or tea for an extra special treat.
