Crispy Almond Brittle
Homemade ‘Devil’s Candy’ – Classic American Almond Brittle Recipe with Oven Baking
Indulge in Almond Brittle, affectionately known as ‘Devil’s Candy’ in the US, a delightful treat renowned for its addictive sweetness and satisfying crunch. This recipe makes it easy to create this classic confectionery at home, combining the nutty goodness of almonds with the rich caramel flavor for a truly special snack.
Key Ingredients- 15g Butter (approx. 1 Tbsp)
- 30g Brown Sugar (approx. 2.5 Tbsp)
- 1 pinch Salt
- 70g Agave Syrup (approx. 3.5 Tbsp)
- 150g Sliced Almonds (approx. 1.5 cups)
Cooking Instructions
Step 1
In a saucepan, combine the butter (15g), brown sugar (30g), salt (1 pinch), and agave syrup (70g). Place over high heat and bring to a boil, stirring until all ingredients are completely melted and combined.
Step 2
Once the mixture has melted into a clear, caramel-colored liquid, reduce the heat to low or briefly remove the pot from the heat. Add the sliced almonds (150g) and stir gently until all the almonds are thoroughly coated with the caramel syrup. Ensure every almond is enrobed.
Step 3
Prepare a baking sheet by lining it with parchment paper. This step is crucial for easy removal of the brittle later, preventing it from sticking.
Step 4
Carefully pour the syrup-coated almonds from the saucepan onto the prepared baking sheet over the parchment paper.
Step 5
Using a spatula or offset spatula, spread the almonds as thinly and evenly as possible. A uniform thickness ensures that the brittle breaks nicely and cooks evenly.
Step 6
Bake in a preheated oven at 150°C (300°F) for approximately 15 minutes. Bake until the almonds are golden brown and the caramel has deepened slightly in color. Keep an eye on it to prevent burning.
Step 7
Remove the almond brittle from the oven and let it cool completely on the parchment paper. It will be very soft when hot, so allowing it to harden fully is essential.
Step 8
Once the almond brittle is completely cool and hard, break it into bite-sized pieces using your hands or a knife. The irregular shapes add to its charm. Enjoy your delicious homemade almond brittle!
