Tuile Batter Ingredients

  • 80g sliced almonds
  • 30g shredded coconut
  • 30g cake rice flour
  • 30g finely ground almond flour
  • 42g unsalted butter
  • 50g allulose sweetener
  • 30g granulated sugar
  • 2 large egg whites

First, carefully crack 2 fresh eggs and separate the whites into a clean bowl. You can save the yolks for other dishes.

Add 50g of allulose sweetener and 30g of granulated sugar to the egg whites. Whip them until they become foamy and light. It’s important to whisk until the sugar is fully dissolved and the mixture is smooth.

Once the sugar has completely dissolved into the egg whites and the mixture is smooth, sift the 30g of cake rice flour and 30g of finely ground almond flour through a sieve (preferably twice) into the bowl. Mix gently. This step helps create a smoother, more delicate batter.

Melt the 42g of unsalted butter by placing it in a microwave-safe bowl and heating it in 20-second intervals twice. Be careful not to overheat it; warm melted butter is ideal.

Gradually pour the warm melted butter into the batter prepared in step 3, mixing gently with a whisk. The key is to incorporate the butter evenly throughout the batter, creating a smooth consistency.

Now, add 80g of sliced almonds and 30g of shredded coconut to the batter. Gently mix until just combined to complete your delicious tuile batter. Be careful not to break the nuts too much.
