Main Ingredients- 40g Dried Anchovies (head and guts removed for a cleaner taste)
- 5 Korean Green Peppers (washed and stems removed)
- 1/4 Red Chili Pepper (seeds removed and finely minced)
- 1 Clove Garlic (finely minced)
- 1 Section Scallion (white part, finely minced)
Seasoning- 1 tsp Soy Sauce
- 1 tsp Sugar
- 1 tsp Corn Syrup (or Oligosaccharide)
- 1 tsp Mirin (Rice Wine)
- Pinch of Toasted Sesame Seeds (for nutty aroma)
- 1 tsp Sesame Oil (for finishing fragrance)
- 1 tsp Soy Sauce
- 1 tsp Sugar
- 1 tsp Corn Syrup (or Oligosaccharide)
- 1 tsp Mirin (Rice Wine)
- Pinch of Toasted Sesame Seeds (for nutty aroma)
- 1 tsp Sesame Oil (for finishing fragrance)
Cooking Instructions
Step 1
Prepare all your vegetables for stir-frying. Finely mince the scallion and garlic using a knife or food processor. If you’re using the red chili pepper, remove the seeds and mince it finely as well for a nice color and balanced flavor.

Wash the Korean green peppers thoroughly under running water, then pat them dry. Trim off the stems and cut them into 1-2 cm pieces. (Tip: If you prefer less spiciness, you can remove the seeds or blanch them briefly before stir-frying.) Heat a lightly oiled pan over medium heat and stir-fry the green peppers until they are slightly softened.

Now, let’s stir-fry the anchovies. Add the anchovies to a dry, preheated pan over low heat. Stir-fry them gently without any oil, making sure they don’t burn. This step is crucial for removing any fishiness and bringing out their natural savory flavor, resulting in a crispy texture.
Step 4
Let’s make the delicious sauce! In a small bowl, combine 1 tsp soy sauce, 1 tsp sugar, 1 tsp corn syrup, and 1 tsp mirin. Mix well. Add 3 tablespoons of water to this mixture to create a sauce that isn’t too salty and will coat the ingredients beautifully. Pour this sauce into the pan and bring it to a gentle simmer.
Step 5
Add the stir-fried anchovies directly into the simmering sauce and toss quickly to coat them evenly. Once the anchovies are well-coated, add the stir-fried Korean green peppers, minced red chili pepper, minced garlic, toasted sesame seeds, and finally, drizzle with 1 tsp of sesame oil. Toss everything together until glossy. This dish is wonderful served immediately while warm, or cooled as a perfect side dish for your meals!
