A Staple Side Dish You Can’t Do Without: Crispy Anchovy and Nut Stir-Fry
A bowl of rice is truly satisfying with just kimchi, but adding a simple side dish like seasoned anchovies makes it even better! This recipe offers a clean and light anchovy stir-fry, made without any oil, making it easy to enjoy even in larger quantities. We highly recommend making this quick and simple dish!
Ingredients- 2 generous handfuls of dried anchovies (for soup, about 50g)
- 1.5 handfuls of mixed nuts (almonds, walnuts, etc.)
- 1 Tbsp soy sauce for braising
- 2 Tbsp water
- 3-4 Tbsp corn syrup or rice syrup (adjust sweetness)
- A pinch of sesame seeds
- 1/2 Tbsp sesame oil
Cooking Instructions
Step 1
First, to remove any fishy smell and moisture, lightly toast the dried anchovies in a dry pan over medium-low heat for about 2 minutes. Once they are slightly crisped, transfer them to a separate dish and set aside to cool.
Step 2
Prepare the nuts by chopping them into bite-sized pieces. Almonds can be left whole or halved. Walnuts or pecans can be lightly crushed with a knife for better sauce adhesion and easier eating.
Step 3
In a small pot, combine 1 Tbsp soy sauce for braising, 2 Tbsp water, and 3-4 Tbsp corn syrup or rice syrup. Stir well. Once the mixture comes to a boil, add the prepared nuts. Simmer for about 3 minutes, or until the sauce has slightly reduced and thickened.
Step 4
Reduce the heat to low. Add the toasted anchovies to the pot and stir well to coat them evenly with the sauce and nuts. Continue to stir-fry for another 2-3 minutes, ensuring everything is well mixed. Be careful not to burn the anchovies.
Step 5
Turn off the heat. Drizzle in 1/2 Tbsp sesame oil and sprinkle with sesame seeds for an extra nutty aroma.
Step 6
Transfer the finished anchovy and nut stir-fry to an airtight container. Let it cool completely before sealing. Enjoy this delicious side dish with your meals!
