  • 1 cup small dried anchovies (for rice)
  • 1/2 cup dried shrimp
  • 1 tablespoon toasted sesame seeds

  • 0.5 tablespoon soy sauce
  • 2 tablespoons grapeseed oil or cooking oil

Cooking Instructions

Step 1

First, in a dry, unheated pan, add 1 cup of small dried anchovies and 1/2 cup of dried shrimp. Stir-fry over very low heat, being careful not to burn them. It’s crucial to stir-fry until the anchovies become pleasantly crisp and any fine powder is removed. This step helps eliminate the fishy smell and sogginess characteristic of anchovies.

Step 2

Once well-fried, place the anchovies and shrimp in a sieve to shake off any fine powder, and set them aside. The savory aroma from stir-frying will further enhance their flavor.

In a small bowl, combine all the seasoning ingredients: minced garlic, rice wine, soy sauce, grapeseed oil, corn syrup, and sugar. Mix them well. Pour the combined seasoning into the pan and bring it to a boil over medium heat until it bubbles. The sauce will slightly thicken as it boils.
