If you have some tasty stir-fried anchovies at home, you can easily whip up a nutritious breakfast or a simple yet satisfying lunch for your kids. The savory anchovies and soft rice combine to create a dish your children will absolutely love!
Main Ingredients- Finely minced stir-fried anchovies, 4 Tbsp
- Kimbap-style pickled radish, 2 rolls
- Crushed seaweed flakes (Gim), 1 handful
- Sesame oil, 2 Tbsp
- Warm cooked rice, 1.5 bowls
- Salt, 1 pinch (optional)
- Sesame seeds, 2 Tbsp
Cooking Instructions
Step 1
Prepare the stir-fried anchovies. (See recipe @7010444 for how to make them). Place about 4 tablespoons of stir-fried anchovies on a cutting board and finely mince them with a knife. This will create a smoother texture when mixed with the rice.
Step 2
Finely chop the 2 long kimbap-style pickled radish rolls. The sweet and sour taste of the radish will enhance the overall flavor of the rice balls.
Step 3
In a large bowl, combine the minced stir-fried anchovies and chopped radish. Add 1.5 bowls of warm cooked rice. If the rice is too hot, the ingredients might not stick together well, so let it cool slightly before using.
Step 4
Drizzle in 2 tablespoons of sesame oil for a rich, nutty aroma. Sesame oil will make the rice balls even more flavorful.
Step 5
You can add furikake or sesame seeds according to your preference. If your children dislike the distinct taste of furikake, I recommend adding just 2 tablespoons of savory sesame seeds, as I do. Sesame seeds add a pleasant crunch and nuttiness.
Step 6
Add a handful of crushed seaweed flakes (gim). This adds umami and an appetizing color. Now, use a spatula or your hands to thoroughly mix the rice and all the ingredients until well combined and no clumps remain.
Step 7
Shape the rice mixture into bite-sized balls. Forming them into small, round shapes that fit a child’s mouth will help prevent spills and make them easier to eat. Lightly wetting your hands or wearing disposable gloves can prevent sticking and make shaping easier.
Step 8
Your delicious anchovy rice balls are ready! If you find them slightly under-seasoned, they pair wonderfully with a cup of instant noodles. Personally, I enjoy eating them with dried radish kimchi (moolkimchi); the crunchy texture and tangy flavor create a perfect harmony with the rice balls.
