While plain anchovy stir-fry can sometimes be a bit bland, the nutty crunch of walnuts and almonds elevates the flavor and adds delightful texture.   • 1/2 cup walnuts
  • 1/2 cup almonds
  • 2 cloves garlic

  • 2 Tbsp mirin (rice wine)
  • 1 Tbsp sugar
  • 1 Tbsp rice syrup (or corn syrup)

First, prepare the anchovies, walnuts, almonds, and garlic. You can substitute peanuts for almonds or walnuts, or use a mix of your favorite nuts. Feel free to customize the nuts to your preference!

Finely chop the walnuts and almonds with a knife. Chopping them enhances their nutty aroma and makes them blend well with the small anchovies, creating a better texture for each bite.

Instead of minced garlic, we’ll be using thinly sliced garlic. Slice the garlic cloves thinly into slivers. This will allow the garlic’s aroma to infuse gently into the dish, adding more depth of flavor.

To remove any fishy smell or gaminess from the anchovies, toast them in a dry frying pan over medium heat for about 40 seconds. If you prefer extra crispy anchovies, you can extend the toasting time. Transfer the toasted anchovies to a separate bowl.

Next, add a little cooking oil to the frying pan. Add the sliced garlic and sauté gently over low heat until the garlic’s fragrance is released. Be careful not to burn the garlic; the goal is to infuse its flavor slowly.

Add the anchovies back into the pan and stir-fry for another 30-40 seconds over low heat. This step helps the anchovies absorb the subtle garlic aroma.

Then, add the finely chopped walnuts and almonds and stir-fry for about 30 seconds. Once the nuts are lightly toasted, turn off the heat IMMEDIATELY. Add the soy sauce (1 Tbsp), mirin (2 Tbsp), and sugar (1 Tbsp). Stir well to coat the ingredients evenly with the sauce. Turn the heat back on briefly, just for a short stir, then turn it off again. Finally, add the rice syrup (1 Tbsp) and stir everything together using the residual heat of the pan until well combined. This will result in a delicious anchovy and nut stir-fry! (While corn syrup or oligosaccharide is commonly used, I opted for rice syrup for its deeper sweetness. Feel free to adjust to your liking!)
