- 100ml tempura flour (approx. 60g)
- 200ml cold water
Flavorful Dipping Sauce

- 1/2 Tbsp vinegar
- 1 Tbsp water
- 1 Tbsp soy sauce
- 1 Tbsp yuzu extract/jam
- 1/2 Tbsp vinegar
- 1 Tbsp water
Cooking Instructions
Step 1
First, prepare your fresh chives. A typical small package, about one bunch, should be sufficient. Feel free to adjust the amount based on your preference.
Step 2
Here are the key ingredients for a crispy pancake: pancake mix and tempura flour. Using a 100ml measuring cup makes it easy. Adding tempura flour is crucial for achieving that delightful crispiness.
Step 3
Wash the chives thoroughly and chop them into manageable pieces. If they’re too long, they can be awkward to eat, so aim for lengths of about 3-4 cm. Try not to chop them too far in advance to preserve their fresh aroma.
Step 4
Now, let’s make the batter! In a bowl, combine the pancake mix, tempura flour, and cold water. Mix them together. Remember, the tempura flour is what gives the pancake its wonderful crispiness, so don’t skip it!
Step 5
The best way to mix the batter is by hand, wearing disposable gloves. This ensures a smooth consistency without lumps and helps the chives integrate perfectly with the batter.
Step 6
This is the ideal batter consistency. If it’s too thin, the pancake will spread out too much, and if it’s too thick, it will be lumpy and difficult to cook evenly. You want it to flow smoothly but still coat the chives well.
Step 7
Let’s whip up a delicious dipping sauce to complement the pancake. Using measuring spoons, combine 1 tablespoon of soy sauce, 1 tablespoon of sweet yuzu extract (or jam), 1/2 tablespoon of vinegar for a touch of tang, and 1 tablespoon of water. The yuzu extract adds a lovely refreshing citrus note.
Step 8
Heat a generous amount of oil in a pan over medium heat. Pour the batter thinly onto the pan. Use the back of a ladle to gently spread the batter outwards for an even thickness. Cook until golden brown and crispy on one side.
Step 9
Oops! It looks like I might have had the heat a little too high, and the edges are slightly browned. But don’t worry! This slight char often adds a wonderful toasty flavor, doesn’t it? It’s just a little bit of character! ^^
Step 10
Voila! Our delicious chive pancake is ready. It looks beautifully golden and inviting.
Step 11
Typically, pancakes are torn apart with chopsticks for that rustic charm. However, today, I’ll be cutting mine into bite-sized pieces with scissors for easier enjoyment. Enjoy the satisfying crunch and wonderful flavor of your homemade chive pancake!
