  • 1 bunch fresh chives (approx. 100-150g)
  • 1 large egg
  • 1 cup pancake mix (using a standard paper cup)
  • 1 cup tempura flour (using a standard paper cup)
  • 1.5 cups cold water (using a standard paper cup)
  • 1/2 Tbsp sugar
  • 1 medium squid
  • 1/2 Tbsp salt
  • Generous amount of cooking oil (for frying)

Optional Ingredients (For Enhanced Flavor!)

  • 2 Cheongyang peppers (for a spicy kick)
  • 2 red chili peppers (for vibrant color)
  • 1/2 onion (for a touch of sweetness)

First, let’s begin by thoroughly preparing all the ingredients needed to make a delicious Squid and Chive Pancake.

If you are using frozen squid, submerge it in cold water to thaw it completely. This helps preserve the squid’s fresh flavor.

Prepare the thawed squid for the recipe. Finely chop the tender tentacles to mix into the batter, and cut the chewy body into bite-sized pieces. If you have time, you can remove the thin skin from the squid body for an even more tender result.

Add the chives, 1 egg, Cheongyang peppers and red chili peppers (if using), pancake mix (1 cup), tempura flour (1 cup), cold water (1.5 cups), sugar (1/2 Tbsp), julienned onion (optional), salt (1/2 Tbsp), and the finely chopped squid tentacles. Mix well until you have a smooth batter with no lumps. Using tempura flour will give you a crispier texture.
