I quickly made this delicious stir-fry using bean sprouts and enoki mushrooms that I bought cheaply at the mart. The texture of the crisp bean sprouts and chewy enoki mushrooms is perfectly preserved, making it an excellent side dish for rice or a great accompaniment to drinks. Main Ingredients

  • 1 handful of bean sprouts (approx. 100g)
  • 2 packs of enoki mushrooms (approx. 200g)
  • 1 small red chili pepper
  • A little chopped green onion
  • A little minced garlic

Seasoning

  • A pinch of salt
  • A pinch of black pepper
  • A little cooking oil

Cooking Instructions

Step 1

Heat a generous amount of cooking oil in a frying pan over medium-low heat. Add the minced garlic and sauté until fragrant. Be careful not to burn the garlic; sauté until it turns golden brown for a richer flavor.

Once the garlic is fragrant, add the washed bean sprouts and stir-fry quickly over high heat. It’s important not to overcook the bean sprouts to maintain their crisp texture.

When the bean sprouts are slightly cooked, add the prepared enoki mushrooms and stir-fry together. Enoki mushrooms cook very quickly, so adding them with the bean sprouts is fine. Season with salt and pepper. Adjust the seasoning to your preference.

Once all the ingredients are well combined, taste and adjust the seasoning with more salt or pepper if needed. Finally, add the finely chopped green onions and sliced red chili pepper, and stir-fry briefly for a final touch. This will complete your colorful and flavorful stir-fried bean sprouts and enoki mushrooms. Turn off the heat.
