This stir-fried anchovy dish, known as ‘Janmyeolchi Bokkeum,’ is a true crowd-pleaser with its irresistible sweet and savory flavor profile. Main Ingredients- 150g of small dried anchovies (janmyeolchi)
- 10 cloves of whole garlic
- 5 Korean green chilies (ttengcho)

- 5 Tbsp oligosaccharide (or corn syrup)
- Sesame seeds, to taste

Cooking Instructions
Step 1
First, wash the whole garlic cloves and remove the hard ends. Slice them thinly, about 0.3cm thick. Heat a pan over medium-low heat, add a generous amount of cooking oil, and gently fry the sliced garlic until it turns golden brown and aromatic. This infuses the oil with a lovely garlic flavor.
Step 2
Once the garlic is lightly browned, add the dried anchovies to the pan and stir-fry them together. For a touch of spiciness, finely chop the Korean green chilies (after removing the seeds) and add them to the mix. You can adjust the amount of chili according to your preference. Drizzle in the soy sauce and a little more cooking oil.

Using a spatula, gently stir-fry the ingredients, making sure the anchovies don’t burn. It’s important to cook them until they lose any fishy smell and develop a pleasant, toasty aroma. Once the anchovies are sufficiently cooked, add 5 tablespoons of oligosaccharide to give the dish a glossy finish and a touch of sweetness, stirring well to combine.
Step 4
Finally, sprinkle in a good amount of sesame seeds for an extra nutty flavor and aroma. Stir for a short moment after adding the sesame seeds, as they can burn easily if cooked for too long.
