Introducing a recipe for anchovy stir-fry (bokkeum) that’s packed with nutrients and perfect as a side dish for children! This recipe will guide you to make it crispy and delicious without any fishy smell.
Main Ingredients- 200g small dried anchovies (for stir-fry)
- Olive oil (or cooking oil), as needed
- 1/2 Tbsp soy sauce
- 1 Tbsp oligosaccharide (adjust sweetness)
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
First, heat a frying pan over medium-low heat. Add 200g of small dried anchovies and stir-fry for about 3-5 minutes. Pre-roasting the anchovies this way helps to eliminate any fishy odor and makes them extra crispy. Stir them occasionally to prevent burning, as if you’re drying out their moisture.
Step 2
Push the roasted anchovies to one side of the pan. In the empty space, drizzle a little olive oil (or your preferred cooking oil). Add 1/2 tablespoon of soy sauce and 1 tablespoon of oligosaccharide. Keep the heat at medium-low and once the sauce starts to bubble, stir everything together quickly to coat the anchovies. This step allows the sauce to thicken and coat the anchovies with flavor.
Step 3
Now, reduce the heat to low or turn it off temporarily. Gently stir the anchovies to ensure the sauce is evenly distributed. Be careful not to overcook, as this can make the anchovies too hard. Stir just until the sauce adheres well to the anchovies. Finally, turn off the heat and sprinkle with toasted sesame seeds for added nutty flavor. Your delicious anchovy stir-fry is now ready!
