Cooking Instructions
Step 1
Heat a wide pan over medium-low heat and add a little cooking oil. Add the small dried anchovies and stir-fry them. Keep the heat low to medium-low, gently stir-frying for 2-3 minutes to remove any fishy smell and enhance their nutty flavor. Fry until the anchovies turn lightly golden and crispy. Once done, set the fried anchovies aside in a separate bowl.
Step 2
In the same pan, combine all the sauce ingredients (red pepper flakes, corn syrup, minced garlic). Stir well over low heat and bring to a gentle simmer. Once the sauce starts to bubble, increase the heat to medium-high. Return the fried anchovies to the pan and quickly stir-fry for about 1 minute, ensuring the anchovies are evenly coated with the sauce. Be careful not to burn the sauce; a quick stir-fry is key.
Step 3
Just before turning off the heat, sprinkle generously with toasted sesame seeds and mix well. The nutty aroma of the sesame seeds will enhance the overall flavor of the anchovy stir-fry.
