Cooking Instructions
Step 1
Wash the burdock root thoroughly. Use a peeler (like for potatoes) to thinly scrape off the skin. Peeling results in a smoother and cleaner texture.
Step 2
Cut the peeled burdock root into segments about 6cm long. Then, make a lengthwise cut partway into each segment. Finally, split the segments in half along the cut. This helps the seasoning penetrate better, making it more flavorful. (This is similar to how you might prepare bellflower root for namul.)
Step 3
Heat a little cooking oil in a pan over medium heat. Add the prepared burdock root and stir-fry until it slightly softens and the surface is lightly cooked.
Step 4
Once the burdock root is sautéed, add 4 tablespoons of soy sauce and 2 tablespoons of corn syrup. Mix well to ensure the seasoning coats the burdock root evenly. Feel free to adjust the soy sauce and syrup ratio to your taste.
Step 5
Continue to simmer over medium heat, stirring occasionally, until the sauce thickens and coats the burdock root. Be careful not to burn it. The key is to reduce the sauce until it clings to the burdock root.
Step 6
Just before turning off the heat, drizzle in 1 tablespoon of sesame oil for added aroma and stir once more. This completes your delicious burdock root simmered in soy sauce! The nutty fragrance of sesame oil enhances the overall flavor.
