Easy Homemade Cabbage Pickles for Kids and Adults
A simple and quick side dish made with fresh cabbage. These cabbage pickles offer a delightful crunch and a sweet and tangy flavor that will stimulate your appetite, making them a favorite for everyone from children to adults. They are perfect as a banchan (Korean side dish) and also excellent served with sandwiches or burgers!
Main Ingredients- 90g fresh cabbage
- 1 Tbsp coarse salt
Seasoning Ingredients- 1/2 Tbsp sugar
- 1 Tbsp vinegar
- A pinch of sesame seeds (for nutty flavor)
- A pinch of dried parsley (for color and aroma)

Cooking Instructions
Step 1
First, carefully remove the outer leaves of the cabbage and cut out the tough core. Then, chop the cabbage into bite-sized pieces (about 2-3 cm), making them easy to eat in one bite. If serving to children, you might want to cut them a bit smaller.
Step 2
Place the chopped cabbage into a zip-top bag or an airtight container. Sprinkle 1 tablespoon of coarse salt evenly over the cabbage. Seal the bag or container and shake well to coat the cabbage thoroughly with the salt. Salting helps to maintain the cabbage’s crispiness and remove excess moisture. Let it sit for about 30 minutes to soften slightly.
Step 3
After 30 minutes, take out the salted cabbage and gently squeeze out some of the water with your hands. Be careful not to squeeze too hard, as this can diminish the cabbage’s crispness. Place the squeezed cabbage in a bowl, add all the seasoning ingredients (1/2 Tbsp sugar, 1 Tbsp vinegar), and gently mix them together. Finally, sprinkle generously with toasted sesame seeds and dried parsley for a beautiful touch. Your simple yet delicious cabbage pickles are ready!
