  • 1/4 head of fresh cabbage (approx. 200g)
  • 16 aromatic perilla leaves
  • 1 vibrant red chili pepper
  • 1 crisp green chili pepper

Sweet and Sour Brine
  • 1/2 cup granulated sugar (approx. 100ml)
  • 1 Tbsp coarse salt
  • 1 cup vinegar (approx. 200ml)
  • 1.5 cups water (approx. 300ml)

Seasoning
  • 1 Tbsp coarse salt (for salting cabbage)

Cooking Instructions

Step 1

First, prepare the cabbage. Wash the cabbage thoroughly, sprinkle with 1 Tbsp of coarse salt, and let it sit for 30 minutes. This process wilts the cabbage slightly while preserving its crisp texture. After 30 minutes, rinse the salted cabbage under running water and gently squeeze out excess moisture.

Step 2

Now, it’s time to layer the pickles. In a clean jar or container, alternately layer the drained cabbage, washed and dried perilla leaves, and the sliced red and green chili peppers. Arranging them in layers not only makes them visually appealing but also ensures even distribution of flavors.

Step 3

Next, let’s make the delicious pickle brine. In a saucepan, combine 1/2 cup sugar, 1 cup vinegar, 1.5 cups water, and 1 Tbsp coarse salt. Bring to a boil over medium heat, stirring until the sugar and salt are completely dissolved. Let the mixture simmer briefly.

Step 4

Pour the hot brine over the layered cabbage and vegetables. Pouring the hot liquid helps the vegetables absorb the flavors more effectively and starts the pickling process. Ensure the brine covers all the ingredients.

Step 5

Finally, allow the pickles to develop their flavor. Let the jar sit at room temperature for about half a day so the brine can infuse into the vegetables.
