Easy Crispy Chive Kimchi Pancake Recipe Using Tempura Flour for Rainy Days
A kimchi pancake that comes to mind on a rainy day! Here’s a recipe for a more flavorful and crispy kimchi pancake by adding plenty of chives and sausage. It’s crispy on the outside and moist on the inside, a universally loved taste.
Main Ingredients- 1 cup Tempura flour (using a standard paper cup for measurement)
- 1 cup Cold water (using a standard paper cup for measurement)
- 1 cup Well-fermented Kimchi
- 50g Fresh Chives
- 5 Vienna Sausages
- Generous amount of Cooking oil
Cooking Instructions
Step 1
First, carefully prepare the ingredients that will determine the flavor of your kimchi pancake. (Measurements are based on a standard paper cup.)

Wash the chives thoroughly and cut them into approximately 2cm lengths for a good bite. If they’re too long, they can be difficult to handle while frying.
Step 3
Slice the Vienna sausages as thinly as possible and into bite-sized pieces, making them easy for everyone, including children, to enjoy.

Prepare 1 cup of well-fermented kimchi, the star ingredient, and chop it finely with scissors. If the kimchi is too watery, you can lightly squeeze out some of the excess juice before using.

In a large bowl, combine 1 cup of tempura flour and 1 cup of cold water. Whisk them together until smooth and lump-free. Then, add the finely chopped kimchi and mix.

Add the sliced chives and Vienna sausages to the batter and mix gently until all ingredients are well combined. Be careful not to overmix, as this can make the batter too watery.

Mix lightly just until the ingredients are evenly distributed. The batter shouldn’t be too thin or too thick. It’s okay if there are a few small lumps; this is one of the secrets to achieving a crispy texture.

Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Ample oil is crucial for preventing the pancake from burning and ensuring it cooks evenly and becomes crispy. Ladle a portion of the batter onto the hot pan and spread it out thinly.

When you tilt the pan, if the pancake slides smoothly, it’s a sign that the bottom is well-cooked. Swirl the pan to ensure the oil coats all parts of the pancake.
