Crispy and Delicious Homemade Coleslaw

Basic Ingredients
- 1/5 head of fresh cabbage (approx. 200g)
- 1/3 sweet carrot (approx. 50g)
- 1/4 onion (for a slight pungent kick, approx. 30g)
- 1/2 paper cup of canned corn kernels (drained, approx. 100g)
- 1/3 Tbsp coarse salt (for salting vegetables)
Sweet and Tangy Coleslaw Dressing
- 2 Tbsp creamy mayonnaise
- 2 Tbsp plain yogurt
- 1/2 Tbsp honey mustard (for added flavor)
- 1 Tbsp sugar
- 1 Tbsp vinegar
- Pinch of salt (to taste)
- Pinch of black pepper

Cooking Instructions
Step 1
Prepare all vegetables: First, thinly shred the cabbage as finely as possible. Also, thinly shred the carrot and onion. The thinner you shred the vegetables, the smoother and tastier your coleslaw will be.
Step 2
Salt the vegetables: Place the thinly shredded cabbage, carrots, and onions in a large bowl. Sprinkle evenly with 1/3 Tbsp of coarse salt. Gently toss and let it sit for 15 to 20 minutes to draw out the moisture from the vegetables. This process helps the vegetables wilt slightly while maintaining their crispness.
Step 3
Make the delicious coleslaw dressing: In a separate small bowl, combine 2 Tbsp mayonnaise, 2 Tbsp plain yogurt, 1/2 Tbsp honey mustard, 1 Tbsp sugar, and 1 Tbsp vinegar. Add a pinch of salt and a pinch of black pepper, then whisk well. Stir until all ingredients are smoothly combined to create a delicious coleslaw dressing. Feel free to adjust the sweetness or tanginess to your preference.
Step 4
Drain the salted vegetables: Squeeze out the water that has been drawn out from the salted vegetables with your hands. Properly draining the vegetables is crucial to prevent the coleslaw from becoming watery and to ensure the dressing mixes well.
Step 5
Combine all ingredients: Add the drained vegetables and the drained canned corn kernels to the prepared bowl. Pour all of the prepared coleslaw dressing over the ingredients. Toss everything together thoroughly until all the vegetables are evenly coated with the dressing. Taste and adjust seasoning with more salt or sugar if needed, according to your preference, for a perfect coleslaw! It tastes even better when served chilled.
