For the Crispy Kimchi Pancake

  • 1 cup all-purpose flour
  • 1 egg
  • 1 squid (cleaned)
  • Kimchi (finely chopped)
  • Chives (chopped to bite-size)
  • Vegetable oil (generous amount)

For the Nutritious Braised Flounder

  • 1 flounder (cleaned)
  • Radish (sliced thinly)
  • 1 piece of pre-made Sundubu Jjigae seasoning packet (for easy flavor)
  • Green onion (sliced diagonally)
  • 1 Tbsp anchovy sauce
  • 2 cups anchovy broth (or water)

For the Spicy and Sweet Stir-fried Pork Bulgogi

  • 150g pork neck or shoulder
  • 2 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp maesil cheong (plum extract)
  • 1 Tbsp jocheong or oligodang (for sweetness adjustment)
  • 1 Tbsp minced garlic
  • Chives (appropriate amount, chopped to bite-size)
  • 1/2 onion (sliced into strips)
  • 1/2 green onion (sliced diagonally)
  • Sesame seeds (for garnish)
  • A little sesame oil (for finishing)

Cooking Instructions

Step 1

[Kimchi Pancake] First, let’s make the kimchi pancake batter. Lightly shake off the excess seasoning from the kimchi and finely chop it. Clean and cut the squid into bite-sized pieces. In a bowl, combine 1 cup of flour and 1 egg. Add the chopped kimchi and squid, and mix to create a thick batter. (You can adjust the batter consistency by adding more flour if needed.) Heat a frying pan with a generous amount of vegetable oil. Ladle portions of the batter into the hot pan and cook until golden brown and crispy on both sides for a delicious kimchi pancake. Ensure the edges are thoroughly cooked and crisp.

[Braised Flounder] Now, let’s make the tender braised flounder. Arrange the thinly sliced radish at the bottom of a pot. Pour 2 cups of anchovy broth over the radish and bring to a boil over high heat.

Once the broth is boiling, carefully add the cleaned flounder. Add 1 piece of the pre-made Sundubu Jjigae seasoning packet; this will provide a deep umami flavor without the need for separate seasoning. Reduce the heat to medium and simmer for about 10 minutes until the flounder is cooked and the sauce has thickened. Finally, arrange the diagonally sliced green onions attractively on top and simmer for a little longer to complete this wonderful braised flounder dish.

[Stir-fried Pork Bulgogi] Lastly, it’s time for the spicy and sweet stir-fried pork bulgogi. In a bowl, combine 150g of pork with 2 Tbsp gochujang, 2 Tbsp gochugaru, 1 Tbsp minced garlic, 2 Tbsp maesil cheong, and 1 Tbsp jocheong. Mix well and let it marinate for about 10 minutes. Heat a pan over medium heat and add the marinated pork, stir-frying it first. Once the pork is partially cooked, add the sliced onion and diagonally sliced green onion, and continue to stir-fry them together.

When the vegetables have softened and the pork is fully cooked, reduce the heat to low and drizzle with a little sesame oil for added aroma. Turn off the heat and mix all the ingredients thoroughly.
