  • 120g fresh laver (gim)
  • 1 paper cup (approx. 100g) pancake mix
  • 1 paper cup (approx. 180ml) cold water
  • 100g plump shrimp, shelled and deveined
  • 1/3 tsp salted shrimp (saeujeot), drained
  • 1 red chili pepper
  • Pinch of black pepper (optional)
  • Vegetable oil, for frying

Cooking Instructions

Step 1

First, thoroughly rinse the fresh laver under running water to remove any dirt or debris. Gently squeeze out excess water, then cut it into bite-sized pieces, about 3-4cm long. Cutting it too small might affect the texture, so aim for a moderate size.

Step 2

Chop the plump shrimp coarsely. You can use the back of a knife or a regular knife. It’s best to leave some texture rather than mincing it too finely, as this adds a pleasant chewiness to the pancakes.

Step 3

In a large bowl, combine the pancake mix. Gradually add the cold water while whisking or stirring with a spoon until you have a smooth batter. Avoid lumps. The consistency should be pourable but not too thin. Adjust the water amount as needed (about 180ml is typical for a paper cup).

Step 4

Once the batter is ready, add the cut laver and the coarsely chopped shrimp. Stir in the salted shrimp (for added umami) and a pinch of black pepper. Mix everything gently until well combined. Be mindful of the amount of salted shrimp, as it can be quite salty.

Step 5

Heat a frying pan over medium heat and add a generous amount of vegetable oil. Once the oil is hot, ladle spoonfuls of the batter onto the pan, forming small, round pancakes. Making them bite-sized makes them easy to flip and eat. Leave some space between each pancake.

Step 6

Thinly slice the red chili pepper and place a slice on top of each pancake as it cooks. The chili adds a lovely splash of color and a hint of mild spice.

Step 7

When the edges of the pancakes turn golden brown, carefully flip them using a spatula or tongs. Cook the other side for another 2-3 minutes until golden brown and crispy. Once both sides are beautifully golden, your delicious laver pancakes are ready! Serve them hot for the best taste.
