- 3 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Plum Extract (Maesil)
- 2 Tbsp Minced Green Onion
- 1 Tbsp Saeujeot (fermented shrimp) with brine
- 1 Tbsp Fish Sauce (Kkanari or Anchovy)
- 1 Tbsp Sugar
- 1/2 Tbsp Salt (1 Tbsp for salting radish, adjust to taste)
- A pinch of Toasted Sesame Seeds
- 3 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Plum Extract (Maesil)
- 2 Tbsp Minced Green Onion
- 1 Tbsp Saeujeot (fermented shrimp) with brine
- 1 Tbsp Fish Sauce (Kkanari or Anchovy)
- 1 Tbsp Sugar
- 1/2 Tbsp Salt (1 Tbsp for salting radish, adjust to taste)
- A pinch of Toasted Sesame Seeds
Cooking Instructions
Step 1
Wash the radish thoroughly. Then, using a slicer or a knife, cut it into long, thin strips about 0.3cm thick. In a bowl, combine the julienned radish with 1 Tbsp of salt and 1 Tbsp of sugar. Gently mix and let it sit for 10 to 15 minutes to salt. This process draws out excess moisture, ensuring a crisp texture.
Step 2
Discard the water that has accumulated from salting the radish. Lightly squeeze out any remaining moisture. Add the minced garlic (optional, 1 Tbsp), minced green onion (2 Tbsp), plum extract (2 Tbsp), gochugaru (3 Tbsp), fish sauce (1 Tbsp), and saeujeot (1 Tbsp, or just its brine) to the radish strips. Mix everything together gently but thoroughly, ensuring all the radish is evenly coated with the seasonings. Be careful not to overmix, as this can make the radish mushy.
