After a long time, I’ve made a delicious side dish by julienning potatoes and stir-frying them with carrots. This recipe offers a delightful texture contrast between the crispy potatoes and other vegetables, making it a perfect accompaniment to any meal. Simple and flavorful, it’s a go-to for quick, homemade Korean dishes.

- 1/4 onion
- A small amount of green onion (about 5cm length)

Welcome! Today, I’m sharing the recipe for ‘Gamjachae Bokkeum’ (Sautéed Potato Strips), a universally loved Korean side dish. Let’s make your dining table even more abundant with this simple yet delicious stir-fry!

First, wash the potatoes thoroughly and peel them. Then, julienne the potatoes into thin, uniform strips, about 0.3cm thick. If julienning is difficult, using a mandoline slicer can be very helpful.

Rinse the julienned potatoes in cold water 2-3 times to remove excess starch. Washing off the starch will prevent the potatoes from sticking together when stir-fried and help maintain a crispier texture. Drain the rinsed potato strips completely in a colander.

Julienne the carrot and onion into similarly thin strips as the potatoes. Finely chop the green onion to add aroma.

Heat cooking oil (about 2-3 tablespoons) in a frying pan over medium heat. Add the julienned potatoes and carrots together and stir-fry. It’s best to cook until the potatoes start to turn slightly translucent.

Once the potatoes are partially cooked, add the julienned onion and continue to stir-fry together. The onion will become translucent and release its sweetness.

When the onion softens, add the chopped green onion and stir-fry for about 1 minute until fragrant. If the potatoes are still not cooked through, reduce the heat to low and cover the pan for a short while to steam them.

When all the potato strips are completely translucent and tender, season with a pinch of salt to your liking. If it’s too bland, gradually add more salt until the flavor is just right.
