Main Ingredients- 18 stalks fresh scallions
- 1 large egg
- 1 Cheongyang chili pepper (optional)
- 1.5 Tbsp pancake mix
- 2 Tbsp tempura flour

Step 1
Begin by thoroughly washing the scallions under running water to remove any dirt or debris. Trim off any wilted parts, then cut them in half crosswise, about 4-5 inches long.

In a mixing bowl, combine the pancake mix and tempura flour. Gradually add water, a little at a time, while whisking to achieve the desired batter consistency. The tempura flour will help make the pancake extra crispy.

The batter should be thick enough to coat the back of a spoon but still flow slowly. Aim for a consistency where it drizzles smoothly when lifted, not too watery or too stiff.

For a touch of heat, finely mince the Cheongyang chili pepper. You can remove the seeds if you prefer less spice. If you don’t have Cheongyang peppers or prefer a milder flavor, you can substitute with another type of chili pepper or omit it entirely.

Lightly coat the prepared scallions in the batter, ensuring they are evenly covered. Heat a generous amount of cooking oil in a frying pan over medium heat. Arrange the battered scallions in the pan, laying them side by side. Sprinkle the minced chili pepper over the top. If there are any gaps between the scallions, fill them in with a little extra batter; this will help the pancake hold together when flipped.

Once the underside is golden brown and crispy, carefully flip the pancake using a spatula. Ensure you lift it gently to prevent it from breaking apart.

Continue to cook the other side until it is also golden brown and crispy. If the pan seems dry, add a little more oil to ensure maximum crispiness.

In a separate small bowl, whisk the egg well. Carefully pour the beaten egg over one side of the cooked pancake, spreading it evenly. Once the egg begins to set, gently flip the pancake again to cook the egg side for a minute or two until fully cooked. Your delicious scallion pancake is ready!
