A Special Pancake Made with Nutritious Sea Gourd (Coseolagi)

Main Ingredients- Coseolagi (Sea Gourd) 300g (if salted, soak in cold water for about 30 minutes to remove saltiness)
- Mixed Seafood 200g (frozen or fresh)
- Carrot 20g (finely julienned)
- Rice Flour for Pancake 1/2 cup
- Cooking Oil, a little (for frying)
Cooking Instructions
Step 1
First, prepare the ingredients for the pancake. If the Coseolagi is salted, soak it in cold water for about 30 minutes to remove the saltiness, then squeeze out any excess water. Finely julienne the carrot, and chop the mixed seafood into bite-sized pieces.
Step 2
In a bowl, place the rice flour for pancake. Gradually add water while stirring to create a smooth batter without lumps. The batter consistency should not be too thin; it should be thick enough to coat the ingredients well.
Step 3
Add the prepared Coseolagi, mixed seafood, and julienned carrots to the batter. Mix everything together thoroughly until all ingredients are evenly coated with the batter. If the Coseolagi strands are long, cut them a few times before adding to the batter for easier eating.
Step 4
Heat a pan over medium heat and add a generous amount of cooking oil. Ladle spoonfuls of the batter onto the hot pan, shaping them into small, flat, bite-sized pancakes for easy cooking.
Step 5
Once the edges of the pancake turn golden brown, flip it over and cook the other side until it is also golden brown and crispy. Flip and cook until the inside is fully cooked. Your delicious Coseolagi Seafood Pancake is now ready! Enjoy it while it’s warm!
