The Ultimate Haemul Pajeon Recipe Using Just Scallions and Squid!
On a rainy day, when you’re craving a warm Haemul Pajeon! You can make a truly wonderful seafood scallion pancake with just the common ingredients of scallions and squid you have at home. Introducing a recipe that’s delicious even without various seafood, and easy enough for anyone to follow.
Pancake Ingredients- 2-3 fresh large scallions
- 1/2 – 1 squid
- 2.5 ladles of Korean pancake mix or all-purpose flour
- 5-6 ladles of cold water (adjust for batter consistency)
- 1 fresh egg
- A pinch of fine salt
- Generous amount of cooking oil (essential for a crispy finish!)
Cooking Instructions
Step 1
First, let’s make the delicious batter, the heart of Haemul Pajeon. In a bowl, combine 2.5 ladles of pancake mix (or flour) with 5-6 ladles of cold water. Start with 5 ladles of water and gradually add more if the batter seems too thick. Crack in 1 fresh egg and a pinch of salt, then whisk until slightly frothy. This amount should yield about 2 pancakes.

Next, we’ll prepare the scallions. Wash the large scallions thoroughly. Cut them into 3-4 segments, considering the size of your pan. Then, cut these segments lengthwise 2-3 times, depending on the thickness of the scallions. This ensures they’re a good size for eating on the pancake.

Squid adds wonderful flavor to Haemul Pajeon! Slice the squid into pieces slightly smaller than bite-sized. I used about 2/3 of a squid for this batter quantity. Using fresh squid will make it even tastier.

Now, it’s time to cook the pancake! Generously coat your pan with cooking oil. Plenty of oil is key to achieving a crispy edge. Gently heat the pan over medium-low heat to warm up the oil.

Pour the prepared batter into the heated pan using a ladle. Spread it thinly and evenly across the pan.

Arrange the prepared scallions nicely over the batter. Ensuring the scallions are spread evenly will make the pancake look more appealing.
