Main Ingredients- 1 pack (approx. 200g) of packaged oysters
- 2 large eggs
- 1 Korean green chili pepper (Cheongyang chili)
- A pinch of red chili pepper (for color)
- 2-3 tablespoons pancake mix (buchim garu)

Cooking Instructions
Step 1
First, prepare one pack of packaged oysters. Drain the liquid from the package and carefully pick out any oyster shells or debris. For freshness, rinse them lightly 1-2 times in cold water with a small amount of salt dissolved in it. Then, drain them thoroughly in a colander. Excess moisture can make the pancakes soggy.
Step 2
Finely mince the 1 Cheongyang chili pepper and the pinch of red chili pepper after removing their seeds. The Cheongyang chili will add a spicy kick, while the red chili will provide a vibrant color, making the pancakes more appealing.
Step 3
In a wide bowl, crack in the 2 large eggs. Add a pinch of salt and 1/2 tablespoon of cooking wine. The cooking wine helps to eliminate any fishy odor from the oysters and makes the egg mixture smoother. Whisk everything together thoroughly with a fork or whisk.
Step 4
In a separate bowl, place 2-3 tablespoons of pancake mix. Add the drained oysters and toss them gently to coat evenly with the flour. Lightly coating the oysters with pancake mix helps the egg batter adhere better and makes the pancakes crispier. Alternatively, you can put the pancake mix and oysters into a ziplock bag and shake it to coat easily.
Step 5
Now, dip the flour-coated oysters into the whisked egg mixture. Gently mix them to coat. Add the minced chili peppers at this stage; their aroma will infuse into the egg batter, enhancing the flavor. Ensure the oysters are well coated with the egg mixture.
Step 6
Heat a non-stick pan over medium-low heat. Add a generous amount of cooking oil. Using plenty of oil is key to preventing the oysters from sticking and ensuring they turn a beautiful golden brown. Carefully place the prepared oysters onto the hot pan, leaving some space between them to cook evenly.
Step 7
Cook the oyster pancakes, flipping them occasionally, until they are golden brown and crispy on both sides. Oysters cook quickly, so avoid overcooking, which can make them tough. Cook each side for about 2-3 minutes, or until the edges are crisp and the pancakes are beautifully golden. Your delicious oyster pancakes are now ready!
