Seasoned Bean Sprouts (Kongnamul Muchim)
A beloved side dish for all ages, Kongnamul Muchim! Bean sprouts are packed with essential nutrients like protein, calcium, and potassium. They are particularly rich in asparagine, an amino acid known for its effectiveness in helping the body break down alcohol, making them a great dish to prevent and alleviate hangovers. Here’s how to make them perfectly crispy and flavorful!
Main Ingredients- 250g bean sprouts (about one handful)
Seasoning Ingredients- A small amount of green onion (finely chopped)
- 1 tsp minced garlic
- 2 Tbsp chili powder
- 1 tsp soy sauce or salt (adjust to taste)
- 1 Tbsp sesame oil
- 1 Tbsp oligosaccharide or sugar (adjust sweetness to taste)

Cooking Instructions
Step 1
First, rinse the bean sprouts thoroughly under running water. Removing any small roots or spoiled parts will result in a cleaner taste.
Step 2
Finely chop the green onion. The fragrant onion aroma will enhance the flavor of the seasoned bean sprouts.
Step 3
Pour 600ml of water into a pot and bring it to a boil over high heat. Once the water is boiling, add the rinsed bean sprouts and 1 tsp of soy sauce (or salt). Cover the pot and boil for about 15 minutes. *Tip: Avoid opening the lid while boiling the bean sprouts to prevent a fishy odor.*
Step 4
As soon as the bean sprouts are cooked to a crisp-tender texture, turn off the heat immediately and rinse them quickly under cold water to cool them down. This helps maintain their crunchy and fresh texture. It’s crucial to drain them completely in a colander.
Step 5
Place the drained bean sprouts in a bowl. Add the minced garlic, chili powder, soy sauce (or salt), chopped green onion, oligosaccharide (or sugar), and sesame oil. Gently mix everything with your hands until the seasoning is evenly distributed among the bean sprouts. Be careful not to mix too vigorously, as this can mash the sprouts. Taste and add more salt or soy sauce if needed.
