  • Lotus root 150g (net weight after preparation)
  • Minced garlic 1 Tbsp
  • Gochujang (Korean chili paste) 2 Tbsp
  • Gochugaru (Korean chili flakes) 1 Tbsp
  • Soy sauce 1 Tbsp
  • Sugar 1 Tbsp
  • Fish sauce 1 tsp
  • Oligosaccharide (or corn syrup) 1 tsp
  • Sesame oil 1 tsp

Cooking Instructions

Step 1

Thoroughly wash the lotus root and slice it into rounds about 0.5cm thick. Bring a pot of water to a boil, add 1 tablespoon of vinegar, and blanch the lotus root slices for about 5 minutes. Blanching with vinegar helps to remove any astringent taste and maintain a vibrant color. After blanching, rinse the lotus root under cold water and drain them completely. This step is crucial for ensuring the lotus root remains wonderfully crisp after seasoning.

In a mixing bowl, combine the minced garlic (1 Tbsp), gochujang (2 Tbsp), gochugaru (1 Tbsp), soy sauce (1 Tbsp), sugar (1 Tbsp), fish sauce (1 tsp), and oligosaccharide (1 tsp) to create the seasoning paste. Stir well until all the ingredients are thoroughly mixed. You can substitute anchovy fish sauce with sand lance fish sauce if preferred.

Add the drained lotus root slices to the prepared seasoning paste. Finally, drizzle in the sesame oil (1 tsp). Gently toss everything together with your hands, ensuring the seasoning coats the lotus root evenly. Be careful not to mix too vigorously, as this can break the lotus root. Transfer the finished seasoned lotus root to a serving dish. For an extra touch, you can sprinkle some toasted sesame seeds on top before serving. Enjoy this delightful side dish!
